Mashed Sweet Potato

You will need...

• 1 pack Greens sweet potato (18114) 1kg
• 1 banana sliced
• 1 orange, zested and juiced
• 1 cup of chicken stock
• 100gm butter
• 2 tablespoons brown sugar
• 1/2 teaspoon nutmeg
• Salt & pepper

To make...

1. Put the frozen sweet potato in boiling water, drain when tender and put aside.
2. Put another pot to the stove on a medium heat.
3. Add the butter and the banana slices. Stir and add the juice of 1 orange (reserve the zest)
4. Cook for 1 minute.
5. Add the potatoes, the stock and the sugar. Mash everything together and season with nutmeg, salt, pepper, and orange zest to your taste.
