Easy Peasy Pizza Jacket Potato

Perfect for family dining and great as part of a sharing platter. Ready quicker than you can say: “Easy Peasy Potato Pizza!”.
Prep ahead then simply grill and garnish for service.
You will need...
- 1 tbsp olive oil
- ¼ red onion, peeled and chopped
- 1 clove garlic
- A handful of cherry tomatoes, halved
- A handful of torn basil leaves
- 5 pitted black olives, chopped
- 10g Prosciutto ham, chopped roughly
- 30g mature cheddar, grated
- 1 Bannisters Yorkshire Family Farm Baked Jacket Potato
Method
- Heat the oil in a frying pan, add the onion and fry until soft.
- Stir in the garlic and cherry tomatoes and continue to fry for a minute.
- Reduce the heat and cook until the tomatoes have softened slightly but not losing their tomato-ey shape, and the mixture is juicy.
- Remove from the heat, stir in the basil, olives and ham then season to taste.
- Open out the cross on the top of each potato and fluff up the centre.
- Spoon in the tomato mixture, then scatter each with cheese.
- Pop under a hot grill for a few minutes until the cheese is bubbly and golden.
- Scatter with extra basil leaves for added freshness!
