Smoked Chicken and Bacon Salad
Our prime chicken breast fillets are smoked over oak chippings to give a deep and earthy favour. Served here with a creamy, herby potato salad and crispy bacon to add a crunch.

Prep
- Peel and dice potato into 1cm cubes. Boil until just cooked. Drain, cool and set aside.
- Place the bacon or prosciutto and chicken skin on a baking sheet, brush over a little oil. Put in a hot oven until crispy, set aside.
- Slice the cooked, smoked chicken breast length ways then keep in refrigerator until ready to use.
- Take half of the cubed potatoes, mix with creme fraiche and herbs and season well.
To Serve
- Fry the second half of potatoes in a little olive oil until evenly golden all around.
- Place the potato salad in the centre of the plate - Use a presentation ring if desired, stack the bacon and chicken slices on top.
- Dress the plate with the fried potatoes and crumbled chicken skin.
