Traditional Butchery – the vital part of the journey from farm to fork
Steaks, minced beef, sausages, gammon. How many of us give much consideration to how the meat we enjoy arrives in our kitchen, ready to be roasted, casseroled, fried or grilled?
Until we launched our fresh meat range in October 2016, we have to confess we hadn’t realised how much skill is required to ensure that meat is tasty and of good quality – and that as little waste as possible is created – when it is butchered.
Traditional butchery is a fine art, which could slowly disappear in favour of factory-produced meat, but fortunately Grassroots, Total Foodservice’s fresh meat partner, is a champion of hand-cut processes and has invested time to develop these skills in a new generation of butchers.
As well as cutting meat, good traditional butchery skills also extend to manufacture of burgers and sausages, curing gammon and bacon, and marinating meats.
Because we’ve learned how important butchers are, we’re delighted that National Butchers’ Week, 13th to 19th March, provides the chance for them to focus on their amazing innovation and creativity – showcasing new dishes to excite customers right across the country
We think it’s also another good opportunity for caterers to promote their meaty menu items, and encourage existing and new customers to try alternatives to minced beef-based products or plain steaks.
