Most of us have seen TV programmes where people such as Rick Stein and Mary Berry pull fish from the sea and immediately cook them over an open fire and eat them on the beach. Having consumed their catches they declare that fresh fish is the tastiest thing anyone could ever eat.

And so it might be, but how many of us have the opportunity to obtain fish straight from the sea?

Of course, anyone living close to a small fishing port might be able to get to the harbour as the day’s catch from local waters is landed only a few hours after being caught, but for the majority this isn’t an option.

Thankfully, for fish lovers who don’t live by the sea, modern freezing techniques allow fish to be processed out at sea on board modern factory ships – usually within 4 hours of being caught. This includes removing all the bits that kitchen staff probably prefer not to do, before individually fast freezing to ensure the nutritional benefits are retained and the fresh flavour is sealed in. The process also stops all microbiological activity, increasing food safety.

In addition to being as flavoursome and nutritionally beneficial as fish pulled fresh from the sea, frozen fish has other benefits too  . . .

Because freezing means all types of fish can be available and affordable year round and not just seasonally, it’s also a way to add variety and simplify menu planning and costing.

Plus using individually quick frozen fish reduces wastage – as foodservice providers need only defrost what is required for use at that time.
